{recipe} Pumpkin Spiced Acorns

Whether used in a pie or the infamous Starbucks latte, the sweet yet balanced flavour of pumpkin is celebrated during the cool autumn season because it brings feelings of warmth, comfort and happy memories. While all recipes using pumpkin taste delicious, we decided to get creative and create pumpkin bread shaped in another fall favourite – the acorn! Charming and absolutely delectable, these sweet treats are filled with the flavours of cinnamon and nutmeg and are topped off with wholesome walnuts for an unbeatable crunch. Perfect for an everyday treat or for a Thanksgiving dessert, these addictive Pumpkin Spiced Acorns are sure to be loved by everyone lucky enough to try one!


Step 1 – Prepare Pumpkin Bread

Flavoured with a variety of autumn-inspired spices like cinnamon and nutmeg, this delicious #pumpkinbread is sure to be a fall staple. Get the #recipe here!

Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup coconut oil
  • 2 eggs
  • 1 1/5 cups flour
  • 1 tps baking soda
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/3 cup water
  • 1/2 can pumpkin

Preheat oven to 350 degrees. Grease the bottom and sides of a loaf pan and set aside.

In a large bowl, mix sugar, eggs and oil together until well combined. In a second bowl, mix flour, baking soda, salt, cinnamon and nutmeg. Slowly add flour mixture to the sugar mixture while adding small amounts of water between each addition. Beat in the pureed pumpkin to the mixture and mix until well combined.

Bake for 55-65 minutes or until a knife or wooden toothpick comes out clean when inserted into the middle of the loaf. Cover and cool completely before slicing.

Step 2 – Prepare Cream Cheese Icing

Pumpkin Spiced Acorns Recipe - Cream Cheese Icing

Ingredients:

  • 1/2 package cream cheese
  • 1/4 cup butter, softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

In a medium sized bowl, mix cream cheese, butter and vanilla together until well combined. Gradually add small amounts of the powdered sugar until you reach a smooth, thick consistency.

When the pumpkin bread has cooled, break off sections and crumble small bits into a large bowl.

Spoon the cream cheese icing into the bowl of pumpkin bread crumbs and mix until well combined. The mixture should be moist and hold together well. Leave some of the icing for later and keep refrigerated.

Step 4 – Mold & Dress Acorns

Using clean hands, roll small balls of the pumpkin bread mixture into the shape of an acorn. Using your fingers or the bottom of a smooth surface, push the acorns down so the top portion is flat and straight. Cover and cool the pumpkin acorns in the fridge for at least 2-3 hours.

When the acorns have cooled, use a butter knife to spread some of the remaning cream cheese icing on the flat surface. You can also dip the acorn in the icing but be sure to cover only the top section of the shape and clean off anything that drips onto the sides.

Dip the acorns chopped walnuts so all of the cream cheese icing is covered. Insert a small piece of a pretzel into the top of the acorn and chill before serving.
